Tomato egg stir fry with rice

Stir-fry Tomato & Egg

  • 2-3 Eggs Beaten
  • 2-3 Roma Tomatoes
  • 1 Chopped Spring Onion
  • 1 T Canola Oil
  • 1 tsp Salt
  • 1 tsp Sugar
  • 1/4 C Water
  • 1 T Corn Starch
  • Opt’l 2 small sausages
  • Opt’l handful spinach

Chop sausages, fry and set aside

In a cool pan add cold oil and heat to medium-high

Add tomatoes and sprinkle with the salt and sugar

Heat through about 5 minutes

Add water with spring onion and more salt to taste

Mix cornstarch with 1 T water and stir in

Once heated through, remove from pan and wipe clean

Reheat pan and heat 1 T of oil followed by the eggs

Stir constantly with chopsticks to keep from sticking

Once cooked about 80% (eggs still soft) add back the tomatoes on top

Add in other ingredients like sausages and spinach, cook until heated through

Add more salt to taste and plate!

I like to serve this with a side of white rice or toast to soak up all the juices!
